ONE UI 7 will be released in Q1 of 2025 Starting with S series (most likely February)

Actually the Beta programme is over,  the official release for S devices will roll out in the first quarter of 2025,see @lminvti 's post.

Just come out of ui7 beta battery life wasn't bad but I prefer the icons on my status bar so I've rolled back to 6.1, before I left the beta there were 10 bugs I found with ui7 but not of them were looked at
