If so, then go into the app, click the 3 vertical lines in top left, click on the cog wheel in top right, click the 3 dots in top right, click on set default account. Choose your hotmail account. It should now be set as the default account for sending email.

One way to check is to go into the apps settings and see if your hotmal is the default (see pic)

Is your outlook(hotmail) account added to your accounts in the phone?
I've just installed Samsung Mail app and set it up with both my outlook and Gmail accounts. I've made each one default and sent a test email. Each mail sends from either outlook or Gmail as expected so I'm unsure why it's not working for you. If your Gmail account isn't linked to the app then it shouldn't send mail thru it at all.
Can you confirm that you're receiving emails that have been sent to your hotmail account okay.
If you go into the mail app settings again (Cog wheel) then tap on your hotmail account. Scroll down to Exchange server settings - check what details you have for email address, Domain/username, Exchange server etc. They should be populated with your hotmail settings.
