Like for my previous phone how can I change EVR to EUX??

You can't, EUX and EVR are the same they both identify as an European model.

I can't update my phone for some reason thought that might be the reason?

Who or where did you get the phone from? What's the last update

Got it from a trusted website last update was a security update in July

Could be you will need an EE sim card to get any software updates.
Should still get updates and EE has updated their phones.
Maybe get a cheap EE pay as you go sim card from a news agents and try it
Can try connecting to a computer and using smartswitch on the computer to check for available updates as well"

To reference 'Glenntech' above, you'll likely need an EE Pay As You Go sim card.

I don't believe so. I think the device is locked onto their network, sadly.

Although there are ways to change the CSC code those last 3 letters will not change. So not worth trying.
