Can you try diagnostics via Samsung members app. Did you install any app on 17/18th

Did diagnostics again says ok, no new apps installed

Is there any specific store where it doesn't work or it doesn't work everywhere?

Does it display error or anything?

Do you have a case on?

You can also try clear NFC cache if you haven't already.
Settings > apps > arrow shaped icon on the corner > toggle on show system apps and press OK > search for NFC > storage > clear cache

Did all that before but no joy, the whole thing doesn't work and the toggle for the nfc won't stay on.

This is a problem i suspect with Google wallet, it sometimes even does this on Googles own pixel phones. It stops working after updating the app itself and then starts working a week or two later once Google updates security on their end. Have you tried switching on nfc in phone settings instead of via Google wallet? Have you set Google wallet as the default wallet and have you checked permissions in app settings?
