I've recently purchased a S24 Ultra 512GB and every time I turn off the Always On Display it turns itself back with a couple of hours. Any ideas?

It might be beneficial to ensure you haven't inadvertently set up any relevant routines on your phone.
Double check the options in your AOD too.
I have mine on Tap tp Show but when I do turn it off in Settings > Lockscreen and AOD it does stay that way

If this was my situation I'd go into AOD and turn it off again, and then Clear the phone's System Partition Cache Files Section.
> Clear Cache Files from the phone's System Partition Section > https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to insert your earphones or hook upto a powered On Laptop or use a Tv's USB Port to access the Clear Partition Section. This may help with lag or stutters as this clears the phone of old/unused or broken cache files.There is also a Repair Apps option in the Menu System too { Possibly excluding the s²⁴ Series of phone's }
Hopefully a back up and factory reset isn't required for this issue.
