Hi @patdepp, welcome to the friendly Samsung community? Have you cleared the cache partition as that is recommended after updates and can help with lags/freezes? Ensure also that Apps are updated.
Follow these steps to wipe cache partition:
1. Turn off the device.
2. Connect To Computer , other Device or TV USB, Press and hold the Volume Up key and then press and hold the Power key
3. When the Android logo displays, release both keys.
4. Wait until the Android system recovery menu options appear.
5. Press the Volume down key several times to highlight wipe cache partition.
6. Press Power key to select.
7. Press the Volume down key to highlight yes, them and press the Power key to select.
8. When the wipe cache partition is complete, Reboot system now is highlighted.
9. Press the Power key to restart the device.

Hello @patdepp and may I extend a Warm Welcome to the Samsung Community Forum 👋
As well as the excellent advice provided by @RedXiiix and @JAMES4578 👌 you may also want to try Safe Mode.
Safe Mode > https://www.samsung.com/uk/support/mobile-devices/how-to-start-my-galaxy-device-in-safe-mode/ turns off downloaded apps and themes etc which may highlight an app or theme that's causing conflict. Alternatively long press the power off button and then long hold on Turn Off to get to Safe Mode.
Feedback via your Samsung Members App can be sent too.

If i can be of any further help please don't hesitate to ask 😎

The advice I offer is my own and does not represent Samsung’s position.
I'm here to help. " This is the way. "

@RedXiiix If by any chance all the methods describe do not provide a solution an option is to Factory Reset (ensure you backed up beforehand though), some users though do find this a bit of a hassle. You could also send an Error Report (but would advise to try fixes before this step) Go to Samsung Members-support-Send Feedback-Error Reports-Lock up/Restarting and ensure that the system log Data is selected.

Are you connecting to computer, Other Mobile Device or for instance Tv USB. This is necessary. Need to press volume up and Power Button simultaneously until it Boots into Recovery Mode. you could use the Galaxy Apps Booster available from the Good Guardians suite on the Galaxy store. https://www.sammyfans.com/2024/12/10/galaxy-app-booster-now-supports-one-ui-7-and-android-15/
