New to android - How to get the notifcations to be useful and stop disappearing?

I'm having a hard time adjusting to my Samsung s23. The main thing that has me wanting to give up and go back to an iPhone is the way notifications work on this platform.

Is there a way to make it so notifications don't disappear from the notification center/page? It seems like it clears notifications that are more than 24 hours old (I can't always check it every 24 hrs) and it clears notifications once the app it's from has been opened (If I check one email all of the gmail notifications go away). I want all of my notifications to just stay there, I don't care if it looks messy or I have to scroll. I want to be able to trust that if there was ever something I needed to be notified of it will be on the page. I tried using the notification history app, but I'm having a hard time trusting that the phone is creating a notification for every message I receive. Looking at gmail notis from the last few days on my old iPhone and this new phone, there are some missing from the s23. I have the gmail settings set to notify for every message already. Any advice or is there anyway to change this? If not I'm for sure switching back over this.

I also notice that it doesn't make notifications for dismissed calls or missed calls after opening the phone app, is there a way to change that?

pretty sure there isn't a way to disable the "I open 1 Gmail and all the other ones disappear" part, nor the disappearing within 24 hours. but you can enable notification history or get good lock and download Notistar which will display a place on your lock screen where you can view all your notifications from whenever date, I hope that helps.
