I have like 4 different color palettes in my all-samsung widgets. This issue has been present since at least OneUI 3, even before Android 12's color palette theming. I always think the next OS update will fix it, but it's been so long and it's still a mess.
They have to make unified guidelines across all teams working with OneUI apps as there are other inconsistencies within them (inconsistent rounding of corners and 50 shades of grey for example)
