Can anyone please help me understand how to work with this app ?
Everyone is so happy and can get amazing results with this app, except me. 

Am I doing something wrong ?

I took a photo this evening and it came out really awful, it even had the grid lines "burned" onto the final result. 

Why is this ? 

The one taken with the regular Camera came out quite good

Expert RAW will need you to adjust the settings to get the image you want.
It allows you to setup the shot to how you want.
The images will be large file sizes. The information it gathers will have more potential detail
compared to the normal camera app.
This will allow you to edit the photo without losing as much quality in the image.
Expert RAW needs more work to get the image, but end up with a better finished result over normal JPEG photos

I see. So it's not really ideal for point and shoot especially when it comes to fast moving objects?

Well you can use it for fast moving stuff. But the whole point of RAW photos is the ability to adjust the settings to get the best images.
It's not for the regular point and shoot
But the results in the end are going to be better.
It's worth giving it a try. Play with the settings individually to start with till you get used to what it does, then try the next and see how they work together
Once you start getting used to it, you can really get into photography

@MadalinK  Just need to experiment a bit more as@Glenntech  has suggested and given you sound advice. Understand some members may be a bit apprehensive but some practice can achieve better quality.  You can see some guidance in this article https://www.theverge.com/22958552/samsung-expert-raw
