Hello,

In the samsung software i I have disable wireless charge on my samsung s21 ultra, but continues to charge by wireless.

I just have the option: fast charge wireless (it´s disable).  - sorry, but my phone have the Portuguese language.

is supposed to have another wireless charging option?

It is possible?

That is correct, wireless charging cannot be turned off.

Hi, it means when you are charging wirelessly by turning on fast charge wireless it means the charging time will be shorter. I use the slow charge option overnight because continually using fast charge a lot is supposedly not good for the battery.

I slow charge normally because of battery wear and tear. Another option is to limit it to 85% maximum charge to save charge usage. I'm not on a situation where that is practical.
