Hi,
I purchased my note 10 + in the UK, and I'm from the UK. Every time I go to search for the latest update, it just says I have the latest one.
Currently, I have tried (with no success) to:
Cleared cache partition;
Smart switch update on windows (it says the latest is installed);
Factory Wipe.
When I go to software update, it just says it's up to date.
Sercurity patch is 1st August 2019.
Current Version: N975FXXU1ASH5
Android 9, UI 1.5

That's a conundrum as it should have updated @Filliousfog
Can you download the phoneinfo app from the Playstore and look to see what the csc is.
My Note 10+ 5G was purchased from a Samsung Experience Store in the Uk so it's csc is BTU.

Strangly I have the Phone information app although it doesn't say. Had a look in settings, I gather it is under the 'Service Provider SW ver': OXM_XEU_
XEU/XEU,XEU/XME
Is this the correct code?

XEU is a csc of a phone that's unlocked to all network's but not supplied directly by Samsung.
From my own personal experiences of owning such phones rhey do tend to get updates way slower im aftaid @Filliousfog

@BandOfBrothers , That's annoying. I thought I'd at least get the security updates?
I gather if I somehow change the CSC code it would void the warrenty.

Try going into settings then Biometrics and Security then Security Update to see if there is something there.
Usually tho a Security update is attached to a software update.
I just know from owning a Samsung S7 Edge with XEU on it updates took an age.
Changing the csc from XEU to say BTU or trying a Custom Rom is available but please do lot's of homework before attempting anything like this.
Xda-developers.com is a good site to learn.
