@Lucy CI've been on UI7 for at least 2 weeks, I also use Instagram allot and no issue, but would say start with the app and also if you have not do a clean install UI7 is HUGE, or as a minimum wipe the cache partition to clear out any Gremlins.
Google Maps again, your issue is likely the app, app setting, or possible check your A56 app permissions, in particular battery.
I'm running UI7 on the A56 and ZFOLD6 and ZFLIP6 (my sons with an overload of Goodlock customisations). After a clean install, only issue i have is my BT transmitter occasionally restarts the ZFOLD6.
