Is it in your app drawer in the Google folder? If so, then just re add it to your home screen. (1st screenshot)
If it's disabled then check by going to:-
Settings>Apps. Tap the sort icon (2nd screenshot) and toggle 'disabled' (3rd screenshot). Tap on the app and tap 'Enable' (4th screenshot)

Long press on the Gmail icon in your apps, a menu will appear. At the bottom click "Add to home".
