QICK FIX...
So this is an issue with the permissions. They removed the option to allow access to the sensors "all the time" which means the app can't access the sensors when you aren't using the app which you obviously can't do while sleeping.
A quick fix is to open Samsung health on both your watch and phone just before you go to sleep and also if you wake in the night or it will stop tracking your sleep again. This fixed it for me. It's not ideal but it's something for now.
I've spoken to customer service, I've spoken with support, I've messaged them through the members app but they don't listen, they just don't seem to care.
Let's hope they fix it soon. In the mean time hopefully the fix that worked for me will work for you too.
