My experience with One UI 7.0 has been the worst I've ever had on a smartphone, and it's validating to know from conversations with friends that I'm not alone in feeling this way. Several aspects have significantly impacted my daily use:
* Severe battery drain has made the experience incredibly frustrating. If this isn't addressed, I'm seriously considering switching back to Apple.
* The decision to move the search bar to the bottom of the screen is baffling. It's an awkward two-step process now: looking down to type and then back up to view the results. This significantly slows down a fundamental function.
* The quick settings panel feels hidden away in the corner and now requires multiple extra clicks to access frequently used toggles compared to the previous, more convenient implementation.
* The unnecessary redesign of app icons has actually made it harder to quickly identify and launch apps, leading to a slower overall experience.
* Beyond the visual changes, the performance feels sluggish and heavy, which is unacceptable.
* The inconsistent and messy fonts and color choices are visually straining and make the interface difficult to look at for extended periods.
* Changes in camera folder size is annoying. Now I need to read the folder names since cover pics are small.
* Finally, the apparent attempt to mimic Apple's UI raises a fundamental question: why would someone choose Samsung if they prefer the Apple experience? This direction feels unoriginal and alienates users who appreciated Samsung's distinct identity.
A couple of seniors around me contacted me for help them find icons after these updates.

Same experience here. My phone in on charger most of the day. It is not a mobile device any more.
Why Samsung does not accept it is buggy and send enhancements or let users revert back to older version?
I noticed it version 7 is especially bad on Ultra.

Does anyone know if Samsung's product teams pay any attention to this, or another forum for feedback into their product? It would be good to know that they are obtaining feedback from some type of user focus group, if not forums like this.
As a certified product manager, I'm a bit baffled by the above and by some of the choices made.
Of course OneUI isn't just about the UI. Why is there no option to choose a 'skin', including sticking with the last one, especially since many devices will age and never be eligible for the next version, but are still stuck with the last latest compatible skin. It wouldn't hurt to support n-1 and maybe n-2 skins. Of course, at some point there are functionality regression issues, but it's not insurmountable.
What don't I like so far about v7?
Agree with most of the above. The pull down from either side for notifications and settings is 1) the wrong way round as default. For right handers, do they really think settings are more frequently used vs notifications? There's no option to switch them round for left handers (poor accessibility consideration). I have already swiped away notifications I wanted to keep, by accident, when trying to swipe from notifications to settings.
The battery icon is bonkers. Once the battery is partially drained, the dark/light contrast makes the number itself unreadable.
I think some of the visual UX actually resembles one of Sony's on the Z series, which I quite liked.
Summary...
Ask for pre-launch feedback from real users, Samsung, it's not like there are not millions of us
Officially support skins and provide free n-1 and n-2 versions (plus a thoughtfully made 'seniors' version!)
Measure frequency of use and errors (even with an optional beta monitoring app) and use the data.
I'm considering going to LineageOS. Samsung, you could even support this officially (cost, I know).
