You mean One UI 4 beta 3 I guess, but Samsung doesn't seem to want to adopt the Android 12 quick settings for some reason, that's one thing I'd like to have too.
I'm guessing you're thinking of a quick settings panel similar to Android 12 running on Pixel phones? Samsung has chosen not to implement this currently and so quick settings on S21 series remain the same as Android 11. The clock widget comes from Google's official clock app - you can download this on any device from the play store and I can confirm the widgets are now the ones from Android 12 (using it myself). Have to remember OneUI is Samsung's skin on top of open source Android 12, some of the things you see on Pixel Phones are extras Google has added onto 12 just for Pixels.
Some of the Android 12 features haven´t been implemented in the One UI, this is the reason why you cannot see them. I´ll pass your feedback on to the developers anyway 😉.
