Why can't the One UI 6 font be on all apps because it's only on system apps

Simply? Because non system apps are created by others and they set the font in there apps.

I am not employed by Samsung nor do I receive any remuneration as a Samsung Members Star.

My device is an S25 Ultra.

If your using a downloaded theme @galaxyuser81 then you could have a word with the developer of that theme.

Daily Driver > Samsung Galaxy s²⁵ Ultra 512Gb ~ Titanium Black.

I'm not using a theme or any thing, it just forces Roboto on other apps, like YouTube
