Whenever you change the wallpaper to another the colour palette doesn't seem to change automatically to match the new wallpaper's colours. This is a feature that is baked on stock Android and Pixels, so I don't see the reason that such a simple feature is not working on One UI. Samsung definitely needs to fix and optimise their software in time for One UI 7.0
