So I tried to install an older version of the Samsung keyboard, but it said app not installed, because Samsung keyboard is already installed, but the thing is, I can only disable the new version, I can’t uninstall it. What do I do?

Software for it may not work correctly now anyway
Samsung keyboard will be a part of the One UI software, so don't think you can disable it.
Though you can use a third party keyboard
