Unless you've set anything up inside the Digital Wellbeing area, then it doesn't really add any value to you. I would just leave it if it doesn't do anything you need.
As it is a system setting, it doesn't appear possible up delete it from your device.
You can try go to settings > digital wellbeing 3 dots fallow the screenshots i attached, make sure turn From on both to off. (All of it most likely won't switch it or disable it but won't run in Background or so on)
Or you can go apps > find digital wellbeing data clear cache then data back 3 dots on top corner uninstall updates.
See if that helps( it's no benefit to turn them off as it helps your device)
