Phone dropped to 12%, less than 2 minutes later it completely turned off. Plugged the phone it, got a white charging logo, took a few minutes to get enough juice to register a reading of 3% when I was able to power the phone back on.

what's going on here?

I would recommend to try clear cache recovery process on your phone.

Hey there and welcome to the Samsung UK and EU Community Forum

In addition to the above, what is using your battery? Go to battery settings to find out.

It is likely you'll have an app or apps that are draining battery rapidly, you may need to consider deleting them.
I am not employed by Samsung nor do I receive any remuneration as a Samsung Members Star.

My device is an S25 Ultra.

As well as trying what the other users have suggested, it would be worth checking if your software is updated. You can check by going into Settings > Software update > Download and install.

You can also put the phone in Maintenance mode, as similarly to Safe Mode, it will determine whether a third party application is affecting the performance of your phone. Open Settings > Battery and device care > Maintenance mode > Select Turn on > Select whether to restart with or without creating a log. I'd recommend creating a log when entering Maintenance mode. > Select Restart.
