I was on One ui 7 beta on my S24 Ultra in UK and just received the stable update this morning which was around 465MB.
Do I still need to withdraw from the One UI beta program from within the Members App or am I now on the stable version by default?
My Members App still shows me as a participant in the One UI Beta program.

No, by updating to the stable release it will close your beta automatically.
I am not employed by Samsung nor do I receive any remuneration as a Samsung Members Star.

My device is an S25 Ultra.

Once updated to the final version. Also check for app updates in both Samsung and Google stores.

Don't worry about the withdrawal. It should go after a while.
