There is no official release date. Any updates you'll find it on the members platform. You can also regularly check on sammobile for any updates.

When beta testing is complete and stable version ready.

It is currently in beta 3 for S25 series. There have been no announcements about any beta for other S or A Series devices.

Should be noted, one ui8 is very similar on screen to one ui7. It is a small update with limited feature drop so wouldn't get too excited about it.
