S24U factory reset and OneUI 7.0

I'm getting the S25U soon so I'm giving my S24U to my cousin.

After using Smart Switch and resetting the S24U, which is currently in the OneUI 7.0 beta, will it still operate with 7.0 or revert back to the previous version?

Only really relevant if the stable release is beyond February.

If you just factory reset it, it will remain on OneUI 7 beta. I'm actually curious myself as mine was left in this state when I returned it for trade in. I do believe however, it'll just update to the stable OneUI 7 when it's released, but I'm not totally certain of that.

No, it will be in still beta until you receive the final notification that the program has finished and the instructions to install the new update you receive otherwise you may encounter problems later on.

If you leave the beta program you should get a software update notification. It will actually be android 14 one Ui 6. If you install it then it will also wipe your phone and it will be back on One Ui 6.1 stable.
