Prior to my #S24Ultra on my S22 I could connect to a bluetooth speaker with the option of music only and not notifications or calls. Now, if I turn off the Audio choice for the connected speaker, obviously the music no longer plays either. I've exhausted my search through the phone for a solution. Has anyone found a way to turn off notifications and calls to specific Bluetooth devices?

I've done this and I continue to get notifications on my Bluetooth speakers. It's not so much a "notification" as the music pauses for a second (my phone does get the notification).
I don't want the speaker to acknowledge anything other than the music that's playing.

I created separate apps, but I still don't get a notification sound on my phone. Secondly, I want that when I'm receiving a call, it doesn't automatically go into the mic of the device that it's connected to.

This is not your fault, but when I search in Google then I want to have notification sounds on any Bluetooth device and my phone speaker Simon plainly no matter what, I get this article. And that's not what I asked of google.

Alright this should fix your issue. Follow these same steps.
Go to settings then sounds and vibrations then separate app sound then toggle it on. Under apps should be the apps you that are allowed to play notifications across Bluetooth.
Unselect the apps that are causing you frustration in my case mms messages and gmail needed to be unselected.
Once that was done no more messages dropping my volume while listening to music on my bose devices.
