Open messsges app.

Tap on the smiley face icon to open up your emojis.

Then there's a icon with two smikey faces in it.

Tap on the Red + sign and create your own.

Have to be using Samsung Keyboard, if using gboard or SwiftKey, etc.... Double emoji there is no option for it
