I've noticed that my notification quick actions are now showing as blank since I installed the OneUI 6.0 update a few weeks back. I can still interact with the buttons, but can't see what they say. Has anyone else seen this or have a fix?

3rd party or Samsung apps? 3rd party apps could suggest further improvements needed by the developer. A bit drastic but could also try full reset back to factory state.

3rd party, I've mostly noticed it on discord and WhatsApp but there could be others I've not really paid attention to

Hmmm, sounds like a problem specifically with those apps and not your phone (hopefully). You could reach out to the developer of those apps in the hope they issue a fix. Have you looked at the feedback of those apps to see if it's affecting anyone else with the same handset?
