Hello! I had the same issue. Then I noticed the option "variations" at the bottom of the wallpaper, just before you are about to press "done". The other colors are there for me. Hope it works for you.

Yep, it's not just the S22 ultra that lost its pre-installed wallpapers, but also the S24 ultra, S21 ultra, and I guess all the others too. There is only one default theme and those three like yours.
That's not all, on the S21 Ultra even Samsung's wallpapers from Galaxy Themes are no longer compatible with OneUI 7.
And that's not all. If you install compatible themes that you once downloaded, they do not work properly at all, I barely restored the default theme on the S21 Ultra, the phone was completely blocked with old themes. With the default theme, OneUI 7 is fluid and works flawlessly. Now you know that all the bugs of all these countless complaints with all older flagships are caused by old bad themes, not OneUI 7
OneUI 7 is optimized ONLY with your default theme, if your custom themes downloaded before 0neUI 7 doesn't have update, in most cases won't work well with OneUI 7. You need fresh themes, which are optimized for OneUI 7

Honestly, I don't miss those pre-installed themes at all. Good Lock's modules, Galaxy AI, Gemini, the possibilities for a fully personalized OneUI 7 are endless. With so many themes in the Galaxy Store or Google Play Store, no, I don't miss the pre-installed wallpapers

I'm afraid the lost pre-installed themes will never come back. Samsung obviously had a reason for doing this, you can send them feedback through Samsung Members support.
