what is the point of having a waterproof phone if the warranty isn't valid if it gets wet, surely this is misleading people who purchase what they think is a waterproof phone.

The phone isn't " waterproof "
It has an IP68 rating for being water and dust resistant.

Hi as said by the one and only @BandOfBrothers ip67-68 means water resistant which is a completely different concept than waterproof.
If something is waterproof water cannot enter it in normal or abuse conditions and the manufacturer usally replaces a water damaged device. If it is water resistant it means that it can sustain some water abuse but if you damage it via water it means that the damage was caused outside the ip68 "water protection" and at this point it is user fault. I see some people using their water resistant phone as an underwater camera but that is just stupid.
Take the ip rating as a if i drop my phone in the toilet or pour accidentaly water onto it i have a pretty great chance to walk away with that and still have a perfectly undemaged phone, it is more like a bonus/accidental water damage protection.
Full waterproof electronics are for a whole different category of use and users so the 2 things should not be mixed up.
