Your going to be blown away with this powerhouse !
I'm a point and click type of photo taker I'm afraid so do not take advantage of the wealth of options and features of the camera app. 
Best advice is to have a good play around in the settings of the camera app.
In regards to taking notes I use the Samsung Notes app quite a lot and has lots of options inside it.
One nice edition with the s-pen is that I can eject the pen and simply write my note on the phones screen and it saves in the notes app automatically when the pen is re inserted.
The hand written note can also be converted to normal text too manually if you wish.
If you take a look at the pinned posts on this thread you'll see very useful informative information.
YouTube has some great tutorials and tips too.
Top tip > get a case of some sort.
I use a Rhinoshield Crashguard Bumper along with a Whitestone Dome Glass Screen Protector and a dbrand black camo back skin on my Note 9.
