How can I customize the default keyboard

I bought note 10+ today.
Before I had s7edge/9 and there were a chic keyboards. 
But now on my note10+ I have an awful keyboard. To use recent symbols I have to go !?# ->english->recent. It one more step and if u typing very often, it matters.

How return the old-style of the keyboards? 

I cant even download another inputsource:(

I have the same issue on my Note 20 Ultra - no Custom Symbols Option in the settings and this tray look like symbols is so disturbing.
any fix?
