Have you tried going into the phone app
Tap on the three dots top right
Settings
Then scroll down to see if WiFi calling is selected on?

Contact you network provider and have the re-provison wifi calling.

That used to happen alot for me and just have to get tech team to re-activate the account and resend config up date to your phone

If it is no longer showing, you're going to need to contact your network to ask them to provision it again
I am not employed by Samsung nor do I receive any remuneration as a Samsung Members Star.

My device is an S25 Ultra.

The network provider now tell me to contact Samsung as Samsung is responsible for android updates

First, take a look at your Quick Settings to see if Wi-Fi Calling is listed, as it has been added here in the latest One UI 7. Swipe down from the top right > Tap the _ icon to expand your Quick Settings. If you can't see it, try tapping the pencil icon in the top right > Edit > If available, drag to your desired location.

If the feature fails to activate, try these steps below. These have been known to help force a re-registration of the SIM to the network bringing back network operated features such as Wi-Fi Calling.

Turn off your phone > Remove your SIM > Power your phone back on > Unlock the screen and allow to load up for a couple of minutes > Reinsert your SIM at this stage and set aside for 5 > Head back into the Phone App > 3 dots > Settings > Quite often Wi-Fi Calling should reappear.

It's completely their responsibility not Samsung, as they don't have access to your account
Most network providers are trying to get you off the phoen ASAP. Call them and insist on speaking to someone in the tech team. Tell them they fixed it before by deactivating and re-activating wifi calling on your account and then send you apn update

Be inststant, don't let them brush you off

I understand but SURELY Samsung (all) should understand the implications of THEIR updates and make sure this doesn't happen
