Optional Permissions won't activate

On my Galaxy A51,the Settings on Samsung Health appear OK but when I select Permissions, the list of Optional Permissions appears in full but when I tap on any individual option, nothing happens, I'm not given any options to select or not select, effectively frozen or locking me out of making a selection.  Any suggestions to help solve?

It just displays optional permisions for samsung Health, which you can change them by going to settings > apps > samsung health > permissions and you will be able to edit permissions.

Thank you @lminvti .  That helped, thanks.  But doesn't solve a greater problem which is that my Samsung Health app is failing to snyc with the Health Connect app.  I thought this might be related to Permissions but it's still a problem for me. I'll keep checking different options.
