Stock Keyboard Is Bad

The stock keyboard in this beta is not good. It's, for whatever reason, less accurate to type on that the one in Android 11.

They have added extra emoji options but it's nothing like how Google have added it changes are needed

Bottom right allows you to change keyboard. I guess you need to install gboard. I got used to the samsung one tbh

Have you tried to clear cache of the Samsung Keyboard app and then reboot your phone?

If that won't help, please report the problem via the Samsung Members app attaching log files, right after the problem occurs .

I can't find Samsung Keyboard in Apps. Is it called Samsung Keyboard or something else? I can only see Microsoft Swiftkey Keyboard and Keyboard Content Center in Apps.
