I'm running on the Beta program with my s24 Ultra. Just depends when the final version comes out, can one upgrade to the s25 Ultra on the 22nd of this month with the s24 still running on the Beta programme ?.

The stable version will override the beta but the s25 ultra is rumoured to be having ui 7.1 out of the box

I can confirm that when the stable version of One UI 7 is released you will be able to update the device as normal
