Thank you for reporting this and for already submitting a report. Intermittent behaviour where the volume panel sometimes appears and sometimes does not when using Bluetooth headset controls is certainly worth investigating.
Hopefully the logs you submitted will help identify the cause. Please keep an eye on future beta updates to see whether the behaviour improves.
