It would be useful to use AI to improve the (awful) Galaxy Watch 7 series GPS

The Watch 7 GPS is fine when I'm cycling, but it's terribly inaccurate when I go for runs. That's the case in built up areas and anywhere with a small amount of tree cover. The GPS route afterwards will show me cutting most corners and on straight parts of the route it'll say i was weaving all over the place. Invariably that would have involved running through solid buildings at 2 or 3 times my normal pace.

Given samsung is heavily advertising how incredibly powerful and useful Galaxy AI is, why not integrate it into the GPS software to iron out the obvious errors? As much as I find the AI tools for photos fun, that would be a far more useful application.

Agreed, but sadly, the limitations of GPS line of sight, etc...

Recall I was involved on a Geo fence EV only mode for Hybrid cars, same issue meant in the areas of intended use, built up areas, it wouldn't work. Same as GPS in city centres goes bananas.

That said, it should not be as bad as you mentioned as it is usually supplemented with mobile and WiFi pings.
