Some phone's can be set to reboot at a certain time period. Please Check your settings.
Settings, General Management, Reset, Auto Reset at Set Times.
If that's not the case then put the phone in Safe Mode which disables downloaded apps but leaves the stock one's working, and then see what happens.
Put the phone in Safe Mode which disables your downloaded app's but let's your stock app's keep working. If the issues stop then this highlights a downloaded app as the possible issue.
