Finally, it is updated. After many manual attempts. The only potential issue I could identify is that the watch battery was less than 50% charged. I put it on charge and continued to try and force the update. Once, it had finally updated, I noticed that the watch had hit 61% charged.
Next step, try and identify changes. Communication from Samsung us appalling!
