Its an issue on the Watch 5 and 6 possibly the 4 as they all received the same update.
So far no acknowledgement from Samsung or fix.

I contacted Samsung today regarding the broken sleep tracking on my Galaxy Watch 5 Pro. They made zero effort to help me diagnose the issue but instead wanted me to "upgrade" to a Galaxy Watch 6. I put my Fitbit Charge 4 back on my wrist instead. I'll swap back to the GW5Pro if the problem gets fixed.

I went back to my Samsung Tech chat from this morning and, after pressing a bit, I got this from the agent: "To tell you the truth we are currently getting a few concerns that is the same as yours. Which is why we are still collecting the concerns and forwarding them to our developers to see if the software is indeed the one causing the issue."
