Hi @slipd The watch requires a snug fit for sleep tracking,check it is not too loose or tight. If applicable check Power saving Mode and ensure that limit health features are disabled. However you may need to clear the cache of the Samsung Health app and restart both your phone and the watch.
Sometimes though it is necessary to Reboot the watch if the issues persist.

I'm used to, having come from a Fitbit, just setting a target number of hours - not a daily start/finish time. Who can say they sleep the same each night?

I have the watch. Just at some point Open Samsung Health and close it again. The watch will then figure out your sleep independently- via heart rate and movement etc. You don't have to set a time.
