So found an update via the watch Google PlayStore dated the 26th September 2023, note I find watch apps do not auto update, so periodically check via the menu below.

Anyway sleep recording is working again.

Samsung Apps are sometimes available earlier via Settings > Apps > Samsung App updates (secret Galaxy Store).
