I've installed Google assistant, and it's causing the watch to freeze and random times even after rebooting.

Hi try a software reboot, if that doesn't help clear the cache partition & if all fails do a hard reset (Factory reset)

I'd suggest the first two would be a better choice you shouldn't need to do a factory reset.
