Will I get my email/facebook messenger, etc. notification if I take only the watch with me? 

(And leave my phone at home, in the car, etc)

Can I open them and send reply?

If you have an esim in the watch and it is paired and connected correctly you will. If you are using in Bluetooth mode then no as it would need to Bluetooth connection to push the messages through
