Why is samsung pay watch plug in "not compatible"?

I want to know the answer as I want to use it on my new watch.

What is the model code of your watch? Where are you based, and where did you purchase your watch? These are all factors which could affect Samsung Pay on your watch.

I'm in England and my phone is an m31 and my watch was from UK.

Ah, as the M31 does not have NFC (which is required for Samsung Pay) the app is not available on your phone.
