Is there a way to make Bluetooth connection private for buds and watch - I mean I don't want people to connect to them accidentally or for them to be shown to the whole area I'm within

To connect, don't both device and accessory have to be in "pairing mode"?

I have rejected some pairing requests previously.   check from Bluetooth-Advanced Settings  (via Menu Bar-3 Dots) to Block anything that may have previously connected.  Advisable to Turn off Nearby Device Scanning. Settings-Connections-More Connection Settings-Nearby Device Scanning. Some information in this thread :
