You can install Google Fit on your Watch5. Google Fit and Fitbit apps should be able to connect and exchange info with each other.
You could also install Health Connect on your phone (it is from Google and is still in beta). Enable access to Health Connect in the settings of Samsung Health, Google Fit, Fitbit apps. The data should sync between these apps ( based on the permissions you have allowed). Check if this setup works for you.

I have no experience of the Fitbit and have found Samsung Health generally meets my needs (Galaxy Watch 4 is my first smart watch and would say not really one of the biggest health fanatics 🙂 ). Room for some improvements mind you , have not tried Google Fit yet. According to this article Samsung Health fares relatively well. https://www.theunfolder.com/samsung-health-vs-google-fit/
