@Nik26: Please can you confirm the model number of your TV, located on the sticker on the back of the device, or in Settings > Support > About This TV? Are you referring to recordings captured and viewed on a Sky set top box? If so, have you tried reaching out to Sky support directly to see if they're able to look into this for you, including any potential resolution settings for recorded programmes?
