Phone should stop charging at a certain point(like 80%) then it continues to charge before you wake up so its at full for when you do then that way it puts less strain on the battery and protects it for longer
No actually doesn't look like you can do it using bixby routines. But I have a bixby routine that starts at 11pm and changes the charging option to slow charging until 7am.
