Not sure why you are surprised? When you get the stable release, Google wallet will work again

My Google pay is working g as it should. It does ask me to verify ever so often, but no issues with contactless payments of any of the cards loaded.

Hello @Faiz11,

I can confirm that Google Pay app may not work with Beta software version, as this version is not certified. Payments with Google Pay will work as usual when stable version of software is released.

Samsung Wallet should work for contactless payments - If you experience any issues please send an error report through Samsung Members app.

It's clearly stated in the Beta sign up process that apps such as payment services or that require security polices may not work on Beta, and by signing up you accept this and that some functions may not work correctly; that's always a given for any Beta software.
That said, I've been on Beta since it's launch and my Google Pay has been working (I tried it on the off chance as a test) every time.
If what's being reported is correct then Beta will cease and the stable, security signed, release will push on or before the 7th Feb. 10 days and all will be good!
